Miniature anything has my heart, and these mini Brownie Bites are no different! Chewy, warm and fudgy brownies topped with vanilla ice cream, fresh berries or even plain are the perfect dessert for any occasion. They’re similar to my Classic Brownies, and smaller! A Note About Baking Chocolate
When chocolate is the main ingredient in your dessert, I’m a big believer in GO BIG OR GO HOME. I highly recommend seeking out the best baking chocolate you can find. The better the quality chocolate, the more decadent, richer, and more delicious these become. Ghirardelli and Scharffen Berger are great brands.
Bittersweet Chocolate Substitutions
If you’re needing a good substitute for bittersweet chocolate, you can add 1 Tbsp of cocoa powder, 1 Tbsp of granulated sugar and 2 tsps of butter for each ounce of bittersweet chocolate that you’re replacing.
If you don’t have bittersweet chocolate and are in a pinch, you can use semi-sweet chocolate.

What kind of pan should I use?
For these mini brownies I used a mini muffin tin that has 24 mini muffin wells. There are mini brownie pans out there that you can find on Amazon, but I just used what I had and they turned out great! I now have round brownie bites instead of square! 😉
How to Make Brownie Bites

Preheat Oven + Prep Muffin Tin
Preheat oven. Lightly spray 24 mini muffin tin with nonstick cooking spray and set aside.
Make the Batter
Melt butter and bittersweet chocolate over medium-low heat. Remove from heat and stir in sugar.



Stir in vanilla and egg. Add in all dry ingredients and slowly mix to incorporate.



Bake + Cool
Evenly spoon into prepared pan and bake. Let cool, remove, and top with ice cream or fresh berries. Add sprinkles or any other toppings desired and serve immediately.



What can I serve these with?
Serve these mini brownies warm and top with store bought ice cream or make your own. I have a great Homemade Vanilla Ice Cream recipe. Fresh berries, chopped nuts and whipped cream are also great on brownies!

How to Store Brownies
Store leftover brownie bites (if you have any left!) in an airtight container with a lid. They will stay fresh at room temperature for 2-3 days. If you want to extend the freshness for a couple more days, add a piece of bread to the container.
To Freeze: If you want to freeze these brownies, allow them to cool completely before placing in an airtight container or bag, removing excess air. Brownies will stay fresh 2-3 months in the freezer. To thaw, place in the fridge overnight.
