Millet Mash
Ingredients:
1 cup millet (rinsed)
2 parsnips
2 carrots
Variations: beets, cauliflower, squash
3 ¼ cups water
Variation: half water, half coconut milk or broth
Salt
Ghee, olive oil to taste
Instructions:
- peel vegetables and cut into 1-2” pieces
- put millet, vegetables and water into pot and bring to boil, then reduce to simmer for 20 minutes, or until water no longer runs from bottom of pot.
- Mash contents with potato masher or place in food processor (in batches) to blend to desired consistency.
- Add salt and oil/ghee/butter to taste.
