Millet Mash

MilletIngredients:

1 cup millet (rinsed)
2 parsnips
2 carrots
Variations: beets, cauliflower, squash
3 ¼ cups water
Variation: half water, half coconut milk or broth
Salt
Ghee, olive oil to taste

Instructions:

  1. peel vegetables and cut into 1-2” pieces
  2. put millet, vegetables and water into pot and bring to boil, then reduce to simmer for 20 minutes, or until water no longer runs from bottom of pot.
  3. Mash contents with potato masher or place in food processor (in batches) to blend to desired consistency.
  4. Add salt and oil/ghee/butter to taste.
